Scouter Caramel Corn Recipe

This snack is perfect for any occasion. Not only does it taste great but popcorn is super light to take on the trail.

Ingredients:

1/2 cup butter

·

1/2 cup karo syrup

·

1 cup brown sugar

·

1/2 t-spoon baking soda

·

1/2 t-spoon vanilla

·

1 cup peanuts (optional)

·

1/2 cup popcorn kernels

Directions:

1.

Air pop 1/2 cup worth of popcorn kernels and place in a large brown paper bag.

2.

In a sauce pan combine the brown sugar, corn syrup, and butter. Let this mixture boil for 2 minutes.

3.

Remove the caramel mixture from heat and add the baking soda and vanilla.

The color will change a bit and become fluffy.

4.

Pour the caramel mixture over the popcorn inside the brown paper bag (be careful, you are now working with molten lava!). Add the peanuts if desired.

5.

Shake the contents in the brown paper bag for 60 seconds and place in the microwave for 30 seconds. Repeat this step 4 times.

6.

Place the contents of the bag onto a cookie sheet and let cool. (the caramel will harden and become crunchy.)

7.

Rent the movie "Scout Camp" or "Down and Derby" and enjoy.
